Oven Baked Chicken Fajitas February 7, 2012

WOW! This recipe rocks! There was not one complaint with dinner last night. We love Mexican food but with trying to save money I have been trying to make more at home then going out to eat. I found this recipe and was intrigued. I have made crock pot fajitas which were good but kinda ‘soggy’ which would expect after cooking for 8 hours. This recipe kept the veggies crispier which I like.

The only thing I will do next time is kick the heat up a notch with adding a Jalapeno or the hot Rotel tomato/pepper combo, or add red pepper flakes.

 Oven Baked Fajitas

  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 2 Tbsp vegetable oil
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1 (15 oz) can diced tomatoes with green chilies
  • 1 medium onion, sliced
  • 1 large bell pepper, seeded and sliced
  • 12 flour tortillas
  • Toppings such as cheese, sour cream, and guacamole – if desired
  1. Preheat the oven to 400 degrees. Place chicken strips in a greased 13√ó9 baking dish.
  2. In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt
  3. Drizzle the spice mixture over the chicken and stir to coat.
  4. Next add the tomatoes, peppers, and onions to the dish and stir to combine.
  5. Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender. Serve on tortillas with desired toppings.

To clean your washing machine РI found a great & cheap idea to use white vinegar! Go HERE to check it out.


To clean fans – use a pillow case! Put the pillow case over each blade and wipe clean – dust stays in the case and not all over the room. Throw is the washing machine (before you wash it ;)) and you will not have a huge mess on your hands!


I don’t know about ya’ll but my micro fiber couches take a beating with a 4 year old and a dog and a messy husband – non of it is my fault of course ūüėČ

I found this amazing idea which I WILL be trying that is supposed to get microfiber looking awesome again and all you need is a spray bottle, rubbing alcohol, a white sponge and a clean scrub brush. CHEAP!!! Check out the tutorial HERE


Have you looked at your shower head lately? Does it have a mineral build up on it? Has the water flow slowed down? I haven’t tried this YET but I will be attempting it this weekend. You can soak your shower head in 1/2 vinigar, 1/2 water solution for a couple hours and it will clean any build up off the shower head. ¬†You don’t even need to take the shower head off. Put the solution in a sandwich size ziploc bag and put on the shower head in the shower. Keep in place with a rubber band! Found this idea here¬†

Since we did not have much of a winter (not that i’m complaining) I have started making my spring cleaning list. On the to-do list is

  1. Cleaning the washing machine – seriously, who would think you have to clean a washing machine – but ours NEEDS it!
  2. Cleaning the inside of the dishwasher
  3. base boards
  4. grout in the bathrooms – I used to love tile – now I am really no longer a fan
  5. base boards
  6. Micro fiber couches
  7. Deep clean glass top stove/oven
  8. Fans – I always forget to dust the fans
  9. Clean shower head
  10. Closets

Later today I will post cheap, inexpensive alternatives ways to clean your home. Feel free to comment with your tips, tricks and inexpensive cleaning solutions/supplies!
