WOW! This recipe rocks! There was not one complaint with dinner last night. We love Mexican food but with trying to save money I have been trying to make more at home then going out to eat. I found this recipe and was intrigued. I have made crock pot fajitas which were good but kinda ‘soggy’ which would expect after cooking for 8 hours. This recipe kept the veggies crispier which I like.

The only thing I will do next time is kick the heat up a notch with adding a Jalapeno or the hot Rotel tomato/pepper combo, or add red pepper flakes.

 Oven Baked Fajitas

  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 2 Tbsp vegetable oil
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1 (15 oz) can diced tomatoes with green chilies
  • 1 medium onion, sliced
  • 1 large bell pepper, seeded and sliced
  • 12 flour tortillas
  • Toppings such as cheese, sour cream, and guacamole – if desired
  1. Preheat the oven to 400 degrees. Place chicken strips in a greased 13×9 baking dish.
  2. In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt
  3. Drizzle the spice mixture over the chicken and stir to coat.
  4. Next add the tomatoes, peppers, and onions to the dish and stir to combine.
  5. Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender. Serve on tortillas with desired toppings.

Tuesday – Crock pot rotisserie chicken, wild rice, peas

Wednesday – Grilled NY strip steak, home made mac n cheese, oven roasted broccoli

Thursday – Home made Pizza topped with green peppers and tomatoes

Friday – Crock pot teriyaki chicken with rice and veggies

Sat – eat out

Recipe – Garlic Lime Chicken January 26, 2012

One of my families all time fav recipes is Garlic Lime Chicken. Not only is it good right after being made but any left overs (if there is left overs) is awesome the next day. If there is any leftovers – and usually there isn’t, I use them in quesadilla’s. OMG! So good.


The recipe is from I have been making this for years and may be the most addicting chicken ever.  With only 220 calories per serving  – even those on a diet can enjoy it 🙂

Serves 4:


  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/8 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried parsley
  • 4 boneless, skinless chicken breast halves
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 teaspoons garlic powder
  • 3 tablespoons lime juice


  1. In a small bowl, mix together salt, black pepper, cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme and parsley. Sprinkle spice mixture generously on both sides of chicken breasts.
  2. Heat butter and olive oil in a large heavy skillet over medium heat. Saute chicken until golden brown, about 6 minutes on each side. Sprinkle with 2 teaspoons garlic powder and lime juice. Cook 5 minutes, stirring frequently to coat evenly with sauce.

Wednesday – Spicy garlic lime chicken, wild rice, corn

Thursday -spaghetti and meatballs

Friday – Brandon has off so he is in charge of dinner

Saturday – going out to eat 🙂

Does anyone else meal plan? Every year I set this as my goal to really do this every week but always seem to forget to do it. This year is not different – One goal for 2012 is meal planning. So I will begin each week on this blog (on Sunday’s) with my meal plans and would love it if you would to!


Meal planning is great for organizing your kitchen, making sure you have all ingredients for the week, it helps save money by reducing impulse buys while grocery shopping, and I like to know how much time I need to cook 🙂
